Asparagus - the taste of spring!

Our green, sweet, crisp asparagus is grown by Farmer Jack's partners, the Brown family, in the fertile Arreton Valley. Like much of our own produce, we pick and deliver to the shop twice a day, so it is always spankingly fresh when you buy it. We're talking food metres, not food miles!
Is asparagus a super-food? You betcha! You can steam it, roast it, char-grill on the BBQ, eat it raw, make soup, stir-fry it, serve it on its own with foaming hollandaise or a runny poached egg, or have it as one of the veg with your Sunday roast. Not many veggies can boast such versatility!
Asparagus is one of the first new season vegetables; and as well as being really tasty, it is a reminder that the lazy days of summer are not far away!
Steamed Asparagus with Egg
This makes a lovely tasty supper or even a starter.
Serves 2. Preparation 10 minutes Cooking 7 minutes
Ingredients
- 1 bundle asparagus
- 2 eggs
- Hollandaise sauce warm - follow this link to Delia's hollandaise recipe or buy a ready-made jar.
Method
- Steam the asparagus in a pan - for cooking methods, see below
- Warm through the hollandaise sauce
- Poach the eggs
- Drain the asparagus and arrange on a plate, place the poached egg on top and drizzle over the hollandaise sauce
- Enjoy with some crusty bread and a small salad of mixed leaves
